Cass Winery, Paso Robles California


Cass Vineyard and Winery is located in the rolling, oak-studded hills between Paso Robles and Creston on California's beautiful Central Coast.  This area that the vineyard calls home offers quiet serenity for the visitor and an ideal growing environment for wine grapes.

Sited due east of the “Templeton Gap”, we receive the evening's cooling breezes that the west side of Paso Robles is noted for. We also rest far enough from the coast to generate the heat needed to optimally ripen the Rhone varieties grown on our 145 acre estate vineyard.
 

One hundred percent of the wines crafted at Cass Winery are estate grown. Our vineyard surrounds the tasting room and winery.  You can literally touch, taste, see and smell the grapes from the block where they were harvested.  The tasting room also offers a gourmet lunch menu daily from 11am-5pm.

A unique feature of our winemaking is that all of the Rhone grapes we grow are ENTAV certified. ENTAV (Establissement National Technique pour l’Amelioration de la Viticulture) is the national agency of France responsible for the quality of wine grape varieities. Over 90% of all French Vineyards are started with ENTAV certified plants and are only recently available in California. Consequently, these are among the very first wines made from ENTAV grapes grown here.  Click here for more information about this certification.  Cass Vineyard is also a certified sustainably farmed vineyard through our SIP Certification.

 

The Wines!

 

Flying Nymph White $16.99

Aromas of lemon zest, kumquat, lemongrass, and ruby red grapefruit. Although it displays some restraint at first, it soon opens up to notes of honeydew melon, white rose and fresh herbs. The palate is light on its feet, with lean, zippy acid holding together a core of flavors that span honey mandarin, lemon curd, and green apple. The finish stays tight and clean, with a kiss of agave nectar and wet stone.

Flying Nymph Red $19.99

Always a youthful and vibrant wine, the 2010 Flying Nymph is bright, approachable, and downright drinkable. 2010 was a great vintage for Bordeaux varietals and we were able to put together a rockstar blend that over-delivers on all fronts. The nose is distinctively Cabernet in character, with concentrated black fruit, cassis syrup, green peppercorns, and roasted red pepper notes. On the palate, the beauty of the blend shows itself, with a more Merlot-driven profile of red currants, red cherry, pomegranate, and acai berries. Medium bodied and extremely generous in fruit, the bright acidity comes through as the fruit hold tightly to a very long and harmonious finish.

Hacienda Mourvedre $33.99

A Cass cult favorite! Normally a blending grape, this single varietal wine was aged in 100% neutral French oak barrels. The nose initially displays bright red cherry, fresh cranberry and dragon fruit scents.  Mourvedre’s unique varietal characteristics of caramel, forest floor and charcuterie highlight hints of fresh cut mint. On the palate, bright acidity pops open, in the true mourvedre fashion. Complex flavors are showcased with notes of pomegranate, dried cranberries, whole white peppercorns and crushed geranium flowers.

Cabernet Sauvignon $39.99

The aromatics are downright huge on the entry, filled with warm winter spice notes of cinnamon and clove that accompany baked plum, currant, cassis, and cedar. The palate is a full bore, mouth-coating experience of baked black cherry, cola, licorice, red plum, and fig jam. Consistent with the nose are flavors of warm spices, complemented by high notes of brown sugar and wintergreen. Soft and full, the tannins are sweet and integrated, showing good mid palate traction and a spicy body that trails off with a burst of melted cherry. A classic Cabernet from Cass and clearly one of the most outstanding in recent years.
