Hahn Vineyards is continually improving farming practices to make them more environmentally sound, socially just and economically viable.
 
SOIL CONSERVATION
At Hahn, we improve the soil by natural methods such as cover crops, including legumes which mulches into the soil and helps improve nitrogen.

Hahn promotes a wide range of natural pest controls including beneficial insects such as beetles, lady bugs and lace wings.
 
WATER QUALITY & WATER & ENERGY CONSERVATION
Hahn uses VFD (Variable Frequency Drive) pumps which control water and energy usage and uses UV light treatment to give pure clean water to the winery and vineyards.
 
ORGANIC APPROVED & REDUCED-RISK SYNTHETIC PESTICIDES
Hahn uses Stylet oil instead of sulfur when possible which controls mildew and suppresses mites.
 
SOCIAL EQUITY
Hahn considers quality of life issues for farm workers and neighbors in the community. The core group of farm workers at Hahn is provided with full benefits, and the winery stays involved with the farm-growing community.

The Wines!

Hahn SLH 2012 Chardonnay
 

Winemaking

This wine is a thoughtful blend of different Chardonnay clones we’ve planted in our estate vineyards. After the fruit was handpicked and sorted, the grapes were whole-cluster pressed and fermented entirely in small French oak barrels. Part of the wine also underwent a secondary malolactic fermentation. We then hand-stirred the wine on the lees every three weeks for the nine months. This Chardonnay aged in barrel. Our winemaker Paul Clifton selected the barrels he felt best expressed the aromas, flavors and texture of the Santa Lucia Highlands.

Sensory Evaluation

Hahn SLH Chardonnay is rich and layered, with silky notes of golden apple, mango and buttered toast.


 
Hahn SLH 2012 Pinot Noir

 

Winemaking

To make our 2012 SLH Pinot Noir, our winemakers selected fruit from clones that yielded the most expressive aromas and flavors. After the fruit was hand-picked and sorted, it underwent a three-day cold soak in open top fermenters. We then aged this Pinot Noir for 11 months in a selection of French oak barrels. When the wine was ready to be blended, our winemaker Paul Clifton chose the barrels he felt best exemplified the aromas, flavors and structure of the Santa Lucia Highlands.

Sensory Evaluation

This Pinot Noir offers soft tannins, delicious plum and cherry aromas and flavors, a hint of allspice and an underpinning of the earth itself. Without a doubt, its defining feature is its irresistibly silky, velvety texture.


Smith & Hook 2012 Central Coast Cabernet Sauvignon
 

The spectacular 2012 vintage produced fruit with incredible intensity throughout the Central Coast. Sourcing grapes from vineyards in San Antonio Valley, Arroyo Seco and Paso Robles, this vintage of Smith & Hook is multilayered and balanced blend from these different regions.

This wine pairs a vibrant purple color with expressive aromas of blackberries and cassis. Richly textured on the palate, this wine’s robust tannins provide a frame for black cherry flavors and spicy notes of vanilla and cloves.

The broad mouthfeel and robust flavors are the perfect complement to hearty beef or game dishes or a gourmet bacon cheeseburger.


 
Boneshaker 2011 Lodi Zinfandel

 

Grown from Lodi’s old Zinfandel vines, the third vintage of Boneshaker is bigger and bolder than ever. A mix of brick red and purple in the glass, this wine’s aroma draws you in with scents of dark plums and black licorice with slight hints of vanilla incense. A taste of this wine reveals intense flavors of blackberry underlined by cherry cola, framed by chewy tannins and a luscious mouthfeel. This full bodied wine is a palate pleasing potable from start to finish.

For the hungry drinker, this big Zin is a great accompaniment to braised beef short ribs with mashed potatoes or grilled pork belly with caramelized onions
 
Hahn Winery 2012 GSM Red Wine Blend

Ruby and purple colored in the glass, this wine shows aromas of blueberry, dried loganberries and hints of vanilla and cloves. On the palate, bright fruit flavors of raspberries, red currants and blackberries integrate with a sharp mid palate acidity and drying tannins on the finish.

Winemaker notes

The GSM is one of the more complex wines we create, rather than focusing on pure varietal character, the GSM Red Blend requires that each part of the blend play its own part. Grenache is the most fruit forward and lightest of the three components, and it drives the aroma and flavor profile of the wine. The majority of the Grenache in this blend is from the Arroyo Seco AVA, where it produces denser and more concentrated wines than examples grown in areas like Paso Robles or Southern France. The mid palate of the blend is carried primarily by Syrah, which in addition to contributing a lush mouthfeel supplies subtle peppery and blueberry notes. The Syrah component is especially vivid as it comes from Hahn’s cool climate vineyards in the Santa Lucia Highlands, and its structure and darker flavors are perfect counterpoint to the brightness of the Grenache. The Mourvèdre thrives in the hotter areas, so we have to venture outside of Monterey County to find it. Mourvèdre’s considerable tannins and acidity help provide the backbone for the flavors of the other components.
