If you’re a lover of "Baby Amarone" (such as Allegrini's Palazzo Della Torre) wait til you taste this outstanding wine made in the “Appassimento” style!
Rich and ripe with a lush feeling on the palate from the air-dried grapes used in the fermenting process. We were more than a little impressed on our first tasting of this newcomer to the Virginia marketplace.

We decided that we didn't need any other critics awards to recommend this fully to you for your cool weather enjoyment.

Our Tasting notes...............

Lazzarone 2010 is a vigorous wine, with intense structure and colour, and spicy aroma of plums, raisins, cherries, pepper and violets that literally blossoms out of the glass upon first pour, but is soft and agreeable at the same time. The palate it is lush yet full-bodied and intense, but soft and velvet-smooth, with hints of wild berries and notes of black cherry and black currant that blend well with the richness of the wine.

What is Appassimento?

Appassimento is a unique and particular method of Valpolicella Classico, which has always characterized the production of wines of this territory. This technique has its roots in a distant past and since Roman times it has been remembered. Over the centuries, this technique of “drying” the grapes before crushing was completed and today distinguishes the production of the great wines of Valpolicella: Amarone, Recioto and “Ripasso” Valpolicella, in particular.

The experience needed to bring at the right point of drying the grapes is very high. To get an excellent wine Appassimento is essential. It is a very critical and delicate phase, also linked to the cycle of seasons. The grapes perfectly ripe and healthy are selected at the time of the hand picking. The thinnest bunches are chosen, with the berries not too close each other, so that the air can circulate. The grapes are laid out in large perforated  boxes, to ensure excellent ventilation. The boxes are stacked in the fruttaio, a large airy room above the cellar and the grapes are constantly monitored so that the Appassimento takes place in a perfect way.

The Vintage……

The 2010 vintage had a cold and rainy winter and cool spring and summer. At the end of ripening the significant variations in temperature allowed us to have a good quality production. The grapes to be dried were healthy and had good sugar content. The drying phase lasted 30 to 40 days with a good climatic trend that allowed us to obtain a good concentration.

Fresh grapes were crushed in early October and dried grapes were crushed in mid/late November and the fermentations had an average duration of about 20/22 days. Then, thanks to the ageing in wood intended as a completion, the wine retained its fruity and complexity characteristics at the same time. It is a wine with personality and long aging potential, at least 10 years.

About Tenute SalvaTerra "in their words…."

"One morning, fifty years ago, a vine grower took his two young grandchildren in his vineyard on the hills of Valpolicella. From there, they could see the whole Verona valley.“Look at this soil, touch it, do you feel how wet it is? ” The earth smelled of clay, it was soft and red. “Can you see down there? They all need to irrigate their land. Here, the land irrigates itself, between the earth and the rocks there is marl, which takes the water up...”. The two kids were struck by that story and for a while they believed that their grandfather was joking. Then, over time, they understood. That was the secret of that delicious wine everybody liked when they tasted it. Today the two brothers continue to grow vines in Tenute SalvaTerra, combining new technologies with old methods, and never forgetting where it all comes from - the earth."

Tenute SalvaTerra was born in San Pietro in Cariano, in the heart of Valpolicella, when the passion of the Furia brothers met that of a group of entrepreneurs who believed in a great project based on territory, quality but especially teamwork. Everyone knows that their contribution will be decisive for the success of the others, so everyone gives their best every day.
