Winemaker Notes: Composed of a blend of 38% Xarel-lo, 30% Macabeu, 26% Parellada, and 6% Monastrell — all grown Biodynamically in the Conca del Riu Anoia appellation in Catalunya. Aged 18 months sur-lie prior to disgorgement. Made with organic grapes.
"The 2021 De Nit Extra Brut Rosé from Raventós I Blanc is composed from a blend this year of forty percent Xarel-lo, thirty-five percent Macabeu, twenty percent Parellada and five percent Malvasia de Sitges. It was aged for a year and a half sur latte and was disgorged in April of 2023. The wine is a very pale salmon color and offers up a bright and precise bouquet of wild strawberries, white peach, salty minerality, lemongrass and citrus peel. On the palate the wine is vibrant, focused and full-bodied, with a lovely core and mineral undertow, frothy mousse and fine length and grip on the impeccably balanced finish. Fine juice. The pale sparkling rosé 2022 De Nit is a blend of 49% Xarel.lo, 34% Macabeo, 12% Parellada and 5% Monastrell that refermented in bottle where it matured with the lees for 18 months. It has a subtle nose and feels very much like a white wine (which it mostly is) with just a copper tint and almost no red fruit aromas and very faint flavors. It has 12.09% alcohol with a pH of 3.01 and 5.9 grams of acidity balanced by 4.5 grams of sugar. It's clean and precise, and the sugar almost unnoticeable, giving it just an approachable touch but never sweet. It's Mediterranean, with notes of esparto grass, a more generous year.

A bright and harmonious sparkler, very pale pink in color, with snappy acidity working in tandem with the plush, lightly chalky texture to frame flavors of white raspberry and white cherry fruit, pink grapefruit pith and lemon thyme, backed by a rich hint of biscotti. Clean-cut and lightly salty on the finish. Xarel-lo, Macabeo, Parellada and Monastrell. Disgorged March 2024. Drink now. 17,000 cases made, 9,000 cases imported.
