This plush and potent Cabernet offers aromas of black plum, coffee and mint leaves on the nose. The palate brings more black fruit, fresh-cut flowers and a wealth of gripping tannin. This wine is tailor-made for hearty fare like braised beef short ribs and will improve with age for at least a decade.

The 2021 Cabernet Sauvignon, which pours a youthful black/purple color, includes 7% Merlot and was raised for 20 months in 35% new French oak. Lifted in the glass, it has fantastic ripe aromas of graphite, blackcurrant, dried lavender, mountain herbs, and cedar. Full-bodied, it reveals finely coiled tannins, a bright, even spine of acidity, and notes of dusty earth on the finish. It’s showing very well today but is going mature gracefully over the next 10 or more years.
